What this usually means
Treat this as a stop-and-check rather than a drive-on. An overheating engine damages itself quickly and expensively — a warped head or a failed head gasket is a different order of repair from the hose or thermostat that caused it.
Establish first whether the lamp is reporting level or temperature, because they are different warnings that often share a symbol on the cluster. A level warning is usually driven by a float in the expansion tank and means coolant has gone somewhere — a leak, or a head gasket letting it into the combustion chambers. A temperature warning means the engine is hotter than it should be, which can happen with the system completely full.
Low level without a visible leak is the case worth understanding. Coolant does not evaporate from a sealed system in normal use, so a level that falls with nothing on the driveway is going somewhere: into the cylinders past a head gasket, into the oil, into the cabin through a heater matrix, or out of a cap that is no longer holding pressure. A sweet smell or a misted windscreen points at the matrix; white vapour that does not clear points at the gasket.
Overheating with a full system is a circulation or rejection problem — a thermostat stuck closed, an air lock from a refill that was not bled properly, a failed water pump or its belt, a blocked radiator, or cooling fans that are not running. The cheapest and most common of those is air, and it is also the one that follows any cooling system repair.
Do not open a hot expansion tank. The system is pressurised specifically to raise the boiling point, and releasing that pressure hot causes the coolant to flash to steam.
